Thattu Vadai / தட்டு வடை

Thattu vadai is a tasty, spicy snack. Not the healthiest because it’s fried, but you gotta enjoy life right? It takes a while to make, but when it’s a family affair, it’s enjoyable.


Thattu Vadai

Servings 60 vadais

Equipment

  • Tortilla Press – not necessary, but makes the process a lot easier.

Ingredients
  

  • 1.5 cups Whole Black Gram/Ulutham Paruppu (உளுத்தம் பருப்பு) skin removed
  • 1.5 cups Steamed All Purpose Flour (அவித்த கோதுமை மா)
  • 1.5 cups All Purpose Flour (கோதுமை மா)
  • 1 Large White Onion (வெங்காயம்)
  • 2 tbsp Chili Powder (சிவப்பு மிளகாய்த்தூள்)
  • tsp Salt (உப்பு)
  • 1 cup Water (தண்ணீர்)

Instructions
 

  • Wash the paruppu and then let it sit in water for 4 hours. The water should cover about an inch above the paruppu.
  • After 4 hours, drain the paruppu to remove the water.
  • Mix it with steamed all purpose flour and regular all purpose flour.
  • Dice an onion and then bake it in the oven at 350°F for 15 minutes. This is done to remove water. As the onions are baking, mix them on the baking tray so they don't burn. Let the onion cool.
  • Add chili powder and salt to the mixture and mix well.
  • Add the onions after they have cooled and mix well.
  • Add water little by little and knead as you add. The dough should be thick and not sticky. You should end up adding a little less than 1 cup.
  • Break the dough into small balls. Flatten the balls using a tortilla press and then roll out with a pin to make them into thin round shapes. The tortilla press isn't necessary, but greatly quickens the process.
  • Fry the vadai in oil until it becomes crispy. There will be fewer bubbles in the oil when it's done.
