Suruttappam
Ingredients
Sweet Filling:
- ¼ cup Grated Coconut (தேங்காய்ப்பூ) Freshly grated coconut will taste better than the frozen version
- 1 tsp Sugar (சீனி)
- ¼ cup Mung Beans (பயறு) Optional (good source of protein)
Appam:
- ½ cup All Purpose Flour (கோதுமை மா)
- ¾ cup Water (தண்ணீர்)
- ⅛ tsp Salt (உப்பு)
Instructions
Sweet Filling:
- Mix grated coconut and sugar. Can add cooked mung beans (பயறு) if desired.
Appam:
- Mix water, flour, and salt to make a smooth batter
- Heat a pan and add a little bit of oil to make a very light film on pan
- Pour a scoop of the batter and spread from center out to make a roti
- Cook on both sides on low to medium heat. The roti should only be lightly cooked. It will be a white color without brown spots
- Add about 1 -1.5 tbsp of the sweet filling along the diameter of the roti. Then roll the roti to keep the filling inside. Use silicone gloves when rolling and/or lower the heat to avoid burning your fingers.
