Payasam / பாயசம்

Payasam is a light, sweet dessert to enjoy after a meal or for holidays/celebrations.

Payasam

Ingredients
  

  • 5 cups Water (தண்ணீர்)
  • 1 cup Sago (சவ்வரிசி)
  • 1.5 cups Thick Coconut Milk (தேங்காய்ப்பால்)
  • ½ cup Sugar (சீனி)
  • ½ cup Cashews (முந்திரிப்பருப்பு)
  • ½ cup Raisins (முந்திரி வத்தல்)
  • Cardamom Powder (ஏலக்காய்த்தூள்)

Instructions
 

  • Boil 4 cups water.
  • Once the water begins boiling, add the sago to let cook. Keep stirring to prevent the sago from clumping.
  • Once the sago is mostly cooked (clear instead of white), add the coconut milk and continue stirring.
  • Add sugar and continue stirring. Add more sugar if you like it sweeter.
  • Add 1 cup water to make the payasam more runny. Continue stirring.
  • Cut cashews into small pieces. You can cut the raisins too if you'd like.
  • Add cashews and raisins. Stir and cook for about 15 more seconds.
  • Add the cardamom powder, stir, and then remove off the stove. It is ready to serve.
  • The payasam will thicken as it cools. You can add coconut milk and heat to make it more watery before serving.
