Payaru with sugar

Payaru is a mung bean based dish typically eaten for breakfast. The jaggery/sugar helps sweeten the dish, while the mung beans are a good source of protein. This meal is fairly quick to make and fills you up enough to last the morning.

Ingredients
  

  • 2 cups Grated Coconut (தேங்காய்ப்பூ)
  • 4 tbsp Sugar (சீனி)
  • 1 cup Uncooked Mung Beans/Payaru (பயறு)
  • Jaggery (வெல்லம்) Optional

Instructions
 

  • Soak 1 cup payaru in water overnight. Add enough water to cover all the payaru.
  • Put the payaru in a pressure cooker the next morning, adding enough water to cover all the payaru. Add a pinch of salt and cook until the pressure cooker whistles 3 times.
  • Drain the water completely.
  • Add grated coconut and sugar. Mix well and smush the payaru a bit when mixing. If desired, the sugar can be replaced with jaggery (adjust measurements a bit).
  • Add more sugar/jaggery as desired and enjoy!
