Okra Kuzhambu / வெண்டைக்காய் குழம்பு
Okra kuzhambu is flavorful, spicy dish made with okras as the main base. It’s a great alternative to the Okra Milk Curry if you don’t like the sliminess of okra.
Okra Kuzhambu
Ingredients
- 1 cup Okra (வெண்டைக்காய்)
- 5 Garlic Cloves (பூண்டு)
- ½ Medium Sized Onion (வெங்காயம்)
- 1 Medium Sized Tomato (தக்காளி)
- ¼ cup Coconut Milk (தேங்காய்ப்பால்)
- ¾ cup Water (தண்ணீர்)
- 5 tsp Curry Powder (கறித்தூள்)
- Fennel Seeds (பெருஞ்சீரகம்)
- Mustard Seeds (கடுகு)
- Fenugreek Seeds (வெந்தயம்)
- ½ tsp Tamarind Concentrate (புளி)
- 1 tsp Salt (உப்பு)
Instructions
- Cut the okra and fry in oil.
- Dice the tomato. Slice the onion and garlic cloves.
- Cook the onions, garlic, fennel seeds, and mustard seeds in a pot with some oil. Cook on a low flame.
- Once the onion turns a golden color, add fenugreek seeds.
- Add the tomato and let it soften before adding the curry powder and 2 tsp salt.
- Add coconut milk mixed with ½ cup water and let the curry boil on medium heat. Cover the curry with a lid.
- After the curry begins to boil, add tamarind concentrate and ¼ cup water and let it boil again.
- After the curry begins to boil, add okra and let it boil again.
- Add additional salt and coconut milk to taste and serve!
