Kanji / Congee / கஞ்சி

Kanji is a type of rice porridge I grew up eating for breakfast and chose to enjoy with sugar. As an adult, I mostly eat it on its own. Red rice is rich in antioxidants and has more nutrients than white rice.

Cook Time 35 minutes

Ingredients
  

  • 1 cup Red Rice (சிவப்பு அரிசி)
  • 5-6 cups Water (தண்ணீர்)
  • 1 cup Coconut Milk (தேங்காய்ப்பால்)
  • ¼ tsp Salt (உப்பு)
  • Jaggery (வெல்லம்) optional
  • Sugar (சீனி) optional

Instructions
 

  • Wash the red rice with water and then put it in a pot with 5 cups of water and a pinch of salt to cook.
  • Once the rice is fully cooked, add water if most of it evaporated.
  • Add coconut milk and let boil.
  • Add salt to taste and add more water if necessary.
  • Enjoy on its own, with sugar, or with jaggery.
