Kanji / Congee / கஞ்சி
Kanji is a type of rice porridge I grew up eating for breakfast and chose to enjoy with sugar. As an adult, I mostly eat it on its own. Red rice is rich in antioxidants and has more nutrients than white rice.

Ingredients
- 1 cup Red Rice (சிவப்பு அரிசி)
- 5-6 cups Water (தண்ணீர்)
- 1 cup Coconut Milk (தேங்காய்ப்பால்)
- ¼ tsp Salt (உப்பு)
- Jaggery (வெல்லம்) optional
- Sugar (சீனி) optional
Instructions
- Wash the red rice with water and then put it in a pot with 5 cups of water and a pinch of salt to cook.
- Once the rice is fully cooked, add water if most of it evaporated.
- Add coconut milk and let boil.
- Add salt to taste and add more water if necessary.
- Enjoy on its own, with sugar, or with jaggery.
