Fenugreek Curry / வெந்தயம் குழம்பு

Fenugreek Curry is great side to serve with rice for lunch or with puttu for dinner.


Fenugreek Curry

Ingredients
  

  • 1 tsp Fenugreek Seeds (வெந்தயம்)
  • ⅛ – ¼ tsp Mustard Seeds (கடுகு)
  • ½ tsp Fennel Seeds (பெருஞ்சீரகம்)
  • ½ Large Red Onion (வெங்காயம்)
  • 10 Garlic Cloves (பூண்டு)
  • 15-20 Curry Leaves (கறிவேப்பிலை)
  • 5 tsp Curry Powder (கறித்தூள்)
  • ¾ cup Coconut Milk (தேங்காய்ப்பால்)
  • 1 cup Water (தண்ணீர்)
  • 1 tsp Tamarind Concentrate (புளி)
  • 1 tsp Salt (உப்பு)

Instructions
 

  • Soak the fenugreek seeds in water for about 15 minutes.
  • Slice the onion and garlic cloves.
  • Cook onion, garlic, fennel seeds, mustard seeds, and curry leaves in a pot with oil.
  • When onions turn gold, add fenugreek seeds and cook for about 45 seconds.
  • Add curry powder and let cook for a few seconds.
  • Add ¼ cup coconut milk, water, salt, and tamarind concentrate and let cook.
  • Once the curry begins boiling, lower the heat to let it simmer.
  • Add ½ cup thick coconut milk and let cook.
  • Add salt as needed and serve and enjoy!
