Eggplant Milk Curry / கத்திரிக்காய் பால் கறி
Eggplant Milk Curry is a healthier alternative if you love eggplant but don’t want to fry it in oil!
Eggplant Milk Curry
Ingredients
- 1 Eggplant (கத்திரிக்காய்)
- ½ Medium White Onion (வெங்காயம்)
- 2 Green Chili Peppers (மிளகாய்)
- ¼ tsp Salt (உப்பு)
- 1 ½ tsp Coconut Milk (தேங்காய்ப்பால்)
- ½ cup Water (தண்ணீர்)
- 5 Curry Leaves (கறிவேப்பிலை)
- Lemon Juice (எலுமிச்சை சாறு)
Instructions
- Slice eggplants, onion, and green chili peppers. Transfer to a pot.
- Mix 1 tsp coconut milk in water and add to pot. Add salt as well.
- Close pot with a lid and cook on medium heat.
- Once the onions and eggplants are softened, add ½ tsp coconut milk and mix with a fork. Continue cooking for about 2 more minutes.
- Add salt to taste and curry leaves.
- Squeeze some lemon juice and mix before serving.
