Seeni Roti / சீனி ரொட்டி

Seeni roti is a light, sweet snack you can enjoy with your afternoon tea. My mother grew up eating this for dinner sometimes, but we eat it mostly as an afternoon snack.


Seeni Roti

Servings 6 rotis

Ingredients
  

  • 1.5 cups All Purpose Flour (கோதுமை மா)
  • 3/4 cup Grated Coconut (தேங்காய்ப்பூ) Freshly grated coconut will taste better than the frozen version
  • 1/4 tsp Salt (உப்பு)
  • 1/4 cup Sugar (சீனி)
  • 1/4 cup Water (தண்ணீர்)

Instructions
 

  • Mix the flour, grated coconut, salt, and sugar in a bowl
  • Add 1/4 cup water and mix well. Add more water as needed, bit by bit, to get the right consistency. The dough should not be sticky
  • Make small balls out of the dough and then flatten them into circular shapes
  • Cook the rotis on a pan with light oil on medium-high heat. Cook each side for about 2 minutes
