Payasam
Ingredients
- 5 cups Water (தண்ணீர்)
- 1 cup Sago (சவ்வரிசி)
- 1.5 cups Thick Coconut Milk (தேங்காய்ப்பால்)
- ½ cup Sugar (சீனி)
- ½ cup Cashews (முந்திரிப்பருப்பு)
- ½ cup Raisins (முந்திரி வத்தல்)
- Cardamom Powder (ஏலக்காய்த்தூள்)
Instructions
- Boil 4 cups water.
- Once the water begins boiling, add the sago to let cook. Keep stirring to prevent the sago from clumping.
- Once the sago is mostly cooked (clear instead of white), add the coconut milk and continue stirring.
- Add sugar and continue stirring. Add more sugar if you like it sweeter.
- Add 1 cup water to make the payasam more runny. Continue stirring.
- Cut cashews into small pieces. You can cut the raisins too if you'd like.
- Add cashews and raisins. Stir and cook for about 15 more seconds.
- Add the cardamom powder, stir, and then remove off the stove. It is ready to serve.
- The payasam will thicken as it cools. You can add coconut milk and heat to make it more watery before serving.
