Ingredients
- 1.5 cups Whole Black Gram/Ulutham Paruppu (உளுத்தம் பருப்பு) skin removed
- ¾ Large Red Onion (வெங்காயம்)
- 8 Green Chili Peppers (மிளகாய்) Take seeds out to make less spicy
- 15 Curry Leaves (கறிவேப்பிலை)
- Salt (உப்பு)
- ½ cup Water (தண்ணீர்)
- 3 Dried Red Chili Peppers (செத்தல் மிளகாய்)
Instructions
- Wash the paruppu and then let it sit in water for 4 hours. The water should cover about an inch above the paruppu.
- After 4 hours, drain the paruppu to remove the water.
- Grind the paruppu using the wet grinder. Add ½ cup water slowly as you grind. The consistency should end up being slightly thick and not runny.
- Put the ground paruppu in a bowl. Add salt and mix well.
- Dice the onions and green chili peppers. Cut the curry leaves into small pieces.
- Add the onions, green chili peppers, curry leaves, and dried red chili peppers (break into small pieces). Mix well.
- Wet your hands with water and then make a ball from the mixture. Flatten it very lightly and put a hole at the center.
- Fry this vadai mixture in oil. There will be fewer bubbles in the oil when it's done.
