Eggplant Milk Curry / கத்திரிக்காய் பால் கறி

Eggplant Milk Curry is a healthier alternative if you love eggplant but don’t want to fry it in oil!


Eggplant Milk Curry

Ingredients
  

  • 1 Eggplant (கத்திரிக்காய்)
  • ½ Medium White Onion (வெங்காயம்)
  • 2 Green Chili Peppers (மிளகாய்)
  • ¼ tsp Salt (உப்பு)
  • 1 ½ tsp Coconut Milk (தேங்காய்ப்பால்)
  • ½ cup Water (தண்ணீர்)
  • 5 Curry Leaves (கறிவேப்பிலை)
  • Lemon Juice (எலுமிச்சை சாறு)

Instructions
 

  • Slice eggplants, onion, and green chili peppers. Transfer to a pot.
  • Mix 1 tsp coconut milk in water and add to pot. Add salt as well.
  • Close pot with a lid and cook on medium heat.
  • Once the onions and eggplants are softened, add ½ tsp coconut milk and mix with a fork. Continue cooking for about 2 more minutes.
  • Add salt to taste and curry leaves.
  • Squeeze some lemon juice and mix before serving.
