Vegan Watalappam / வட்டிலப்பம்

Watalappam is my favorite dessert! It took me a while to figure out how to make this vegan after playing around with egg replacers and agar agar powder.


Vegan Watalappam

Ingredients
  

  • 1/4 cup Coconut Milk (தேங்காய்ப்பால்) Can use canned coconut milk or fresh milk drained from grated coconut
  • 1/8 cup Water (தண்ணீர்)
  • 1/4 cup Jaggery (வெல்லம்)
  • 1/8 tsp Nutmeg
  • 1/8 tsp Clove (கராம்புத்தூள்)
  • 1/8 – 1/4 tsp Cardamom Powder (ஏலக்காய்த்தூள்)
  • 1/2 tsp Agar Agar Powder
  • 3-4 Cashews (முந்திரிப்பருப்பு)

Instructions
 

  • Mix all ingredients into a small pot. Break the cashews into small pieces. The spice measurements can be adjusted as needed based on personal preference.
  • Heat the mixture on low heat until it begins to boil. Stir the mixture as it simmers for about 5 minutes. Transfer the mixture into a bowl and let cool at room temperature for about 5 minutes and then in the refrigerator for about 2-3 hours before serving.
  • When ready to serve, melt some extra jaggery to pour over the wattalappam if desired.
